Filling Ingredients

  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Finishing Ingredients

  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Instructions

  1. Prepare the Dough: Combine the all-purpose flour and cold, cubed unsalted butter in a bowl. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together without becoming sticky. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. Make the Filling: Peel, core, and finely chop the tart apples. In a mixing bowl, toss the apples with brown sugar, cinnamon, lemon juice, and vanilla extract to create a sweet, spiced filling.
  3. Roll and Cut the Dough: Once chilled, roll out the dough on a lightly floured surface to about 1/8 inch thickness. Cut out circles approximately 3-4 inches in diameter using a round cookie cutter or glass.
  4. Fill and Seal: Place a spoonful of the apple filling in the center of each dough circle. Moisten the edges with water, fold over into a half-moon shape, and press to seal tightly. Crimp edges with a fork to prevent filling leakage during baking.
  5. Apply Egg Wash and Bake: Brush the tops of each Apple Pie Bomb with egg wash (egg mixed with water) for a golden brown finish. Arrange on a parchment-lined baking sheet and bake at 375°F (190°C) for 20-25 minutes or until golden brown.
