Instructions

  2. Stuff the chicken breasts: Using a sharp knife, create a pocket in each chicken breast by slicing horizontally without cutting all the way through. Spoon the cream cheese and bacon mixture into each pocket, making sure not to overfill.
  3. Crush the Doritos: Place the Doritos in a plastic bag and crush them into fine crumbs using a rolling pin or your hands; set aside half for coating and save some for garnishing later.
  4. Coat the stuffed chicken: Brush each stuffed chicken breast lightly with olive oil or cooking spray, then press them into the crushed Doritos to create a crunchy crust on all sides.
  5. Cook the chicken: Heat a non-stick skillet over medium heat and cook the chicken for about 6-7 minutes per side, or until fully cooked through and golden brown on the outside.
