Bang Bang Salmon Bites

Bang Bang Salmon Bites are a quick and irresistible seafood snack featuring tender, flaky salmon cubes coated in a light crispy batter, fried to golden perfection, and tossed in a creamy, spicy, and slightly sweet bang bang sauce. Ready in under 20 minutes, this flavorful appetizer delivers a perfect balance of heat and creaminess, making it a versatile treat suitable for appetizers, party bites, or light meals.

Ingredients

Main Ingredients

  • fresh salmon fillets, skinless and boneless – about 1 lb (450 g)
  • mayonnaise – 1/3 cup
  • sriracha sauce – 1-2 tablespoons (adjust to taste)
  • honey or maple syrup – 1 tablespoon
  • garlic powder – 1/2 teaspoon
  • rice vinegar or lime juice – 1 teaspoon
  • cornstarch or flour – 1/2 cup
  • vegetable oil – for frying, about 1/4 cup

Instructions

  1. Prepare the salmon: Cut the fresh salmon fillets into bite-sized cubes, roughly one-inch pieces. Pat them dry thoroughly with paper towels to remove excess moisture, which helps achieve a crispier coating when cooking.
  2. Coat the salmon bites: Pour the cornstarch or flour into a shallow bowl. Toss the salmon cubes in the coating evenly, shaking off any excess to keep the coating light and prevent clumps.
  3. Cook the salmon bites: Heat vegetable oil in a skillet over medium-high heat. Fry the salmon bites in batches, avoiding overcrowding, until golden brown and cooked through—approximately 2 to 3 minutes per side. Transfer the cooked pieces to a paper towel-lined plate to drain excess oil.
  4. Make the bang bang sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, garlic powder, and rice vinegar or lime juice. Adjust the sriracha and honey amounts as desired to balance heat and sweetness.
  5. Toss and serve: Gently toss the crispy salmon bites in the prepared bang bang sauce until fully coated. Serve immediately for best texture, optionally garnished with thinly sliced green onions, toasted sesame seeds, or fresh cilantro.

Notes

  • Pat salmon dry to ensure crispiness.
  • Do not overcrowd the pan when frying to maintain oil temperature and prevent soggy bites.
  • Adjust sauce consistency with a splash of water or lime juice if too thick.
  • Serve immediately for optimal crisp texture.
  • Use fresh, quality salmon and sriracha for best flavor.
