Instructions

  1. Prepare the Beans: Trim and blanch the green beans in boiling water for 3-4 minutes until bright green and just tender but still crisp. Drain and let cool slightly.
  2. Sauté the Garlic and Tomatoes: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and cook until they soften and release their juices, 3-5 minutes.
  3. Combine Beans and Tomato Mixture: Stir the blanched beans into the skillet with tomatoes and garlic. Season with salt, pepper, and chopped fresh herbs. Toss gently to combine flavors.
  4. Layer in a Baking Dish: Transfer the bean and tomato mixture to a baking dish. Evenly sprinkle breadcrumbs over the top, then generously cover with grated Parmesan cheese.
  5. Bake Until Golden: Place the dish in a preheated oven at 375°F (190°C) for 15-20 minutes until the cheese melts and the topping is golden brown and crunchy.
