Ingredients

Scale

Biscuit Ingredients

  • 2 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cut into small cubes
  • 3/4 cup whole milk

Sausage and Gravy Ingredients

  • 1 pound breakfast sausage
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or gluten-free flour blend)
  • 2 cups whole milk or heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the Biscuit Dough: Combine the flour, baking powder, and salt in a large bowl. Cut cold butter into small cubes and work it into the flour mixture using a pastry cutter or fingers until it resembles coarse crumbs. Slowly pour in the milk, stirring just until the dough comes together, being careful not to overmix to maintain tender, flaky biscuits.
  2. Form and Bake the Biscuits: Turn the dough onto a lightly floured surface and gently pat it into a 1-inch thick rectangle. Cut rounds using a biscuit cutter and place them on a parchment-lined baking sheet. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes until golden and light in texture.
  3. Cook the Sausage: While the biscuits bake, crumble the breakfast sausage into a skillet over medium heat. Cook, stirring occasionally, until fully browned. Remove excess grease if necessary to prevent oily gravy.
  4. Make the Cheese and Butter Gravy: In the same skillet, melt butter over medium heat. Whisk in flour to make a roux and cook for about 2 minutes to remove the raw flour taste. Gradually add milk or cream, stirring constantly until thickened into a smooth gravy. Stir in shredded cheddar cheese until melted and incorporated. Season with salt and pepper to taste.
  5. Assemble and Serve: Slice warm biscuits in half and place in shallow serving bowls. Spoon the sausage and cheese gravy over the biscuits, allowing them to ‘swim’ in the rich sauce. Serve immediately for a comforting, indulgent breakfast.

Notes

  • Keep butter cold before mixing for flakier biscuits.
  • Do not overmix biscuit dough to avoid tough texture.
  • Use freshly shredded cheese for smoother melting in gravy.
  • Adjust gravy thickness by adding more milk for thinner or cooking longer to thicken.
  • Warm serving bowls keep gravy hot longer.
