Instructions

  1. Prepare Your Ingredients: Peel and cube the potatoes into evenly sized pieces to cook uniformly. Chop the onions, mince the garlic, and if using, slice the bacon or smoked sausage.
  2. Sauté the Aromatics and Meat: In a large pot, cook the bacon or sausage over medium heat until crisp. Remove and set aside, leaving the rendered fat in the pot. Sauté the onions and garlic in the fat until soft and fragrant to build a flavorful base.
  3. Add Potatoes and Spices: Add the cubed potatoes to the pot, sprinkle the Cajun seasoning evenly over them, and toss to coat thoroughly, ensuring the flavors penetrate the potatoes during cooking.
  4. Pour in Broth and Simmer: Pour in chicken or vegetable broth to cover the potatoes. Bring to a boil, then reduce the heat to a simmer and cook uncovered for about 15 to 20 minutes, or until potatoes are tender.
