Instructions

  1. Prepare the Cauliflower: Wash the cauliflower thoroughly, then finely chop or process it in a food processor until it resembles rice grains. Lightly steam or microwave for 3-5 minutes to soften, then drain well and let it cool completely to remove excess moisture.
  2. Combine the Ingredients: In a large mixing bowl, add the cooled cauliflower, grated cheese, finely chopped onion and garlic, eggs, bread crumbs, and season with salt and pepper. Stir well until the mixture is fully combined and holds together when shaped.
  3. Form the Patties: Using your hands, shape the mixture into evenly sized patties about the size of your palm and approximately half an inch thick, ensuring they will cook evenly and crisp properly.
  4. Cook the Patties: Heat olive oil or butter in a non-stick pan over medium heat. Add the patties in batches without overcrowding the pan. Cook each side for 4-5 minutes until golden brown and crispy. Remove and drain on paper towels if desired.
  5. Serve Warm: Enjoy the patties fresh and warm, paired with your favorite dips, or as a side dish. The melty cheese inside is best enjoyed when hot.
