Instructions

  1. Prepare the Cauliflower: Trim the leaves and the stem end of the cauliflower. Carefully slice the head into thick, 3/4-inch steaks, aiming to get 2 to 3 sturdy slices that will hold together during cooking.
  2. Season and Oil: Brush both sides of each cauliflower steak generously with olive oil or melted butter. Sprinkle evenly with salt, freshly cracked pepper, and minced garlic. Add your choice of fresh or dried herbs for aromatic flavor.
  3. Roast or Grill: Place the steaks on a baking sheet lined with parchment paper or foil. Roast in a preheated oven at 425°F (220°C) for 20 minutes, or alternatively grill over medium heat for about 7 minutes per side until tender and golden.
  4. Add Cheese: About 5 minutes before the cooking completes, evenly sprinkle your selected cheese on top of each steak. Return to the oven or grill so the cheese melts into a bubbly, golden layer that seals in all the flavors.
