Ingredients

Scale

Mashed Potatoes Base

  • 2 cups well-seasoned mashed potatoes (smooth and lump-free)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp parsley or preferred herbs

Cheese and Binder

  • 1 cup shredded sharp cheddar cheese (or mozzarella, gouda, feta, or blue cheese as alternatives)
  • 2 large eggs

Structure and Coating

  • 1/2 cup all-purpose flour, gluten-free flour, or breadcrumbs (adjust to firmness)

Cooking Fat

  • Butter or oil for frying or brushing if baking

Optional Herbs and Spices

  • Garlic powder, paprika, or smoked paprika to taste
  • Optional: finely chopped jalapeños or cayenne pepper for heat
  • Optional: cooked crumbled bacon, chopped spinach, or roasted red peppers for variations

Instructions

  1. Prepare Your Mashed Potatoes: Start with freshly made or leftover mashed potatoes, ensuring they are smooth with no lumps. Season well with salt, pepper, and your preferred herbs to infuse flavor right from the beginning.
  2. Mix in Cheese and Binder: Fold in shredded cheese and eggs into the mashed potatoes. The eggs will act as a glue, helping your puffs hold their shape when cooked, while the cheese adds richness and gooey texture.
  3. Add Flour or Breadcrumbs: Gradually sprinkle in your chosen flour or breadcrumbs, mixing until the mixture is firm enough to shape without sticking excessively to your hands.
  4. Shape the Puffs: Using a small ice cream scoop or spoon, form bite-sized balls or oval shapes with your mixture to ensure even cooking and uniform snacks.
  5. Cook Until Golden and Crisp: Fry the puffs in hot oil or bake in the oven at 400°F (200°C) on a greased sheet for 20-25 minutes until they are golden and crispy on the outside while soft and creamy inside.

Notes

  • Use cold mashed potatoes for better shape retention and easier handling.
  • Don’t skip eggs and flour or breadcrumbs as they provide essential structure to keep the puffs intact.
  • Season generously with herbs and spices to elevate flavor.
  • Test cook one puff first to adjust seasoning and texture before cooking the entire batch.
  • If frying, drain excess oil by placing puffs on paper towels after cooking to maintain crispness.
  • To reheat, use a hot oven or air fryer for best texture; microwaving can make the puffs soggy.
