Ingredients

Tortellini and Cheese

  • Fresh or frozen cheese tortellini (about 12 oz)
  • Provolone cheese, sliced or shredded (1 cup)
  • Mozzarella cheese, shredded (1 cup)

Steak and Vegetables

  • Thin-sliced ribeye or sirloin steak (8 oz)
  • Bell peppers, sliced green or red (1 cup)
  • Yellow onions, thinly sliced (1 medium)
  • Garlic, minced (2 cloves)

Seasonings and Oils

  • Olive oil (2 tablespoons)
  • Salt (to taste)
  • Black pepper (to taste)
  • Smoked paprika (1/4 teaspoon)

Instructions

  1. Prepare the Ingredients: Thinly slice the steak, bell peppers, and onions. Mince the garlic. If using frozen tortellini, thaw or cook according to package instructions. Set the cheese blend aside for easy access.
  2. Sauté the Vegetables: Heat olive oil in a large skillet over medium-high heat. Add bell peppers and onions and cook for 5 to 7 minutes until softened and slightly caramelized. Stir in minced garlic during the last minute to avoid burning.
  3. Cook the Steak: Push the cooked vegetables to one side of the skillet. Add the thinly sliced steak to the hot skillet. Season with salt, pepper, and smoked paprika. Cook for 3 to 4 minutes until browned and tender.
  4. Combine Tortellini and Steak Mixture: Add the cooked or thawed tortellini to the skillet. Stir well to evenly coat the pasta with the steak and vegetable mixture.
  5. Melt the Cheese: Sprinkle provolone and mozzarella evenly over the skillet. Cover the pan and reduce heat to low. Let cheese melt for 3 to 5 minutes until bubbly and smooth.
  6. Serve and Enjoy: Gently stir the melted cheese into the tortellini and steak mixture. Serve hot, optionally garnished with fresh parsley or basil.
