Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook your chosen pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water for the sauce.
  2. Cook the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown and cooked through, about 5-6 minutes per side. Once done, remove from pan and slice into strips.
  3. Sauté Garlic and Artichokes: In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Stir in drained artichoke hearts, cooking for another 3-4 minutes until slightly golden and warmed through.
  4. Make the Cream Sauce: Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth. If the sauce is too thick, add reserved pasta water a splash at a time to reach your desired consistency.
  5. Combine Everything: Add cooked pasta and sliced chicken back to the skillet, tossing everything together gently to coat with the creamy sauce. Finish with a squeeze of fresh lemon juice and sprinkle with chopped parsley.
