Ingredients

Scale

Main Ingredients

  • 8 ounces high-quality dark or semi-sweet chocolate chips or chunks
  • 1/4 cup cherry liqueur or cherry cordial
  • 1/3 cup heavy cream
  • 12 fresh pitted cherries or maraschino cherries
  • 2 tablespoons unsweetened cocoa powder (for dusting)
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 12 teaspoons sugar (optional, depending on sweetness preference)

Instructions

  1. Prepare the Ganache: Heat the heavy cream gently over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate in a heat-proof bowl. Let it sit for 2-3 minutes to soften the chocolate, then stir gently until the mixture becomes smooth, glossy, and fully combined, forming a luscious ganache base.
  2. Add Cherry Flavor: While the ganache is still warm, fold in the cherry cordial, vanilla extract, and butter. Stir carefully to combine all ingredients without breaking the silky texture.
  3. Chill the Mixture: Transfer the ganache to a shallow container, cover it, and refrigerate for at least 2 hours or until the mixture is firm enough to scoop and shape.
  4. Form the Truffles: Once chilled, scoop small portions of ganache with a spoon or melon baller. Place one cherry in the center of each portion and carefully roll it into a smooth ball using your hands. Work quickly and keep your hands cool to prevent melting.
  5. Coat the Truffles: Roll each truffle lightly in unsweetened cocoa powder or finely grated chocolate to create a classic chocolate finish and prevent stickiness.
  6. Final Chill: Place the coated truffles back into the refrigerator for another 30 minutes to set and firm up before serving.

Notes

  • Use quality chocolate for the best flavor and texture.
  • Work quickly when shaping the truffles to avoid ganache softening too much.
  • If using fresh cherries, pit and dry them slightly to prevent excess moisture.
  • Patience with chilling ensures the truffles hold their shape beautifully.
  • Try rolling truffles in crushed nuts, toasted coconut, or sprinkles for variety.
