  • 1/2 cup (120ml) heavy cream
  • 1 teaspoon vanilla extract

Crust

  • 1 1/2 cups (150g) crushed graham crackers or cookie crumbs
  • 5 tablespoons (70g) melted butter

Instructions

  1. Prepare the Crust: Mix crushed graham crackers or your favorite cookie crumbs with melted butter until combined and crumbly. Press this mixture evenly into the bottom of cupcake liners or mini cheesecake pans. Chill in the refrigerator for about 10 minutes to set the crust.
  2. Make the Chocolate Cheesecake Filling: In a large bowl, beat the softened cream cheese until silky smooth. Add granulated sugar and mix well. Add eggs one at a time, mixing until fully incorporated. Sift in cocoa powder, then gently fold in heavy cream and vanilla extract, mixing just until combined to keep the texture light.
  3. Shape the Gnome Features: Pour the chocolate cheesecake batter onto the set crusts, filling each mold about three-quarters full. Use a small piping bag or spoon to create a little peak or “hat” on top of each cheesecake to mimic a gnome hat, adding character to each piece.
  4. Bake and Cool: Bake the cheesecakes at 325°F (160°C) for 15 to 18 minutes, or until the edges are set but the centers still jiggle slightly. Remove from oven and let cool completely. Then chill in the refrigerator for at least 2 hours to firm up and develop flavor.
