  • Fresh ginger, minced – 1 tbsp
  • Garlic cloves, minced – 2
  • Fresh cilantro or parsley, chopped (for garnish) – 2 tbsp

Instructions

  1. Prepare the Ingredients: Chop the onions, bell peppers, ginger, and garlic finely. Cut the fish into bite-sized chunks. Have fresh lime juice and chopped cilantro ready for garnishing.
  2. Sauté the Aromatics: Heat a bit of oil in a large pot over medium heat. Add the minced ginger, garlic, and chopped onions. Sauté for 2 to 3 minutes until soft and fragrant. Add the bell peppers and cook for an additional 2 minutes to soften while maintaining some crunch.
  3. Add the Broth and Coconut Milk: Pour in the fish or vegetable broth and coconut milk. Stir to combine and bring the mixture to a gentle simmer. Let it heat through to allow the flavors to meld.
