Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons butter, melted

Filling

  • 24 oz (3 packages) cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup heavy cream or sour cream
  • 1/2 cup brewed coffee or espresso, cooled
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust: Mix the graham cracker crumbs with melted butter until the mixture resembles wet sand. Press it firmly into the base of a springform pan to form an even crust layer.
  2. Blend the filling: In a large bowl, beat the softened cream cheese with sugar until smooth and fluffy. Add eggs one at a time, mixing well after each addition. Fold in the heavy cream and vanilla extract, followed by the brewed coffee or espresso, ensuring the mixture is fully combined and smooth.
  3. Pour and bake: Pour the coffee cheesecake batter over the prepared crust in the pan, smoothing the top with a spatula. Bake at 325°F (160°C) for 50 to 60 minutes, or until the center is just set but still slightly jiggly.
  4. Cool and chill: Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or preferably overnight to let the flavors meld and the texture firm up properly.

Notes

  • Use room temperature ingredients to ensure a smoother batter and prevent lumps.
  • Do not overmix the batter to avoid incorporating excess air, which can cause cracks.
  • Bake the cheesecake in a water bath wrapped in foil to prevent cracking and promote even cooking.
  • Choose high-quality, freshly brewed espresso or strong coffee for the best flavor.
  • Chilling the cheesecake thoroughly overnight greatly improves flavor and texture.
