Company Casserole

Company Casserole is a comforting, versatile, and easy-to-make one-pan dinner perfect for busy nights, family gatherings, or potlucks. Featuring tender chicken or turkey, mixed vegetables, creamy soup, and melted cheese topped with a crispy crunchy layer, it delivers hearty flavor with minimal prep and maximum satisfaction.

Ingredients

Scale

Protein

  • 1 to 1.5 pounds chicken breast or turkey, cooked and chopped

Vegetables

  • 2 cups mixed vegetables (such as peas, carrots, green beans, mushrooms, bell peppers, or spinach)

Base

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1/4 cup milk or broth (to thin out the soup)

Cheese

  • 1.5 cups shredded cheese (such as cheddar or mozzarella), divided

Topping

  • 1 cup crispy topping (breadcrumbs, crushed crackers, or gluten-free alternatives)

Instructions

  1. Prepare the ingredients: Start by cooking your choice of protein, whether chicken breast or turkey, until fully cooked and tender; chop the vegetables and shred the cheese to have them ready for assembly.
  2. Mix the base: In a large bowl, combine the cream soup with a splash of milk or broth for a smoother consistency, then stir in the cooked protein, vegetables, and about half of the cheese.
  3. Assemble in a baking dish: Pour the mixture into a greased casserole dish and sprinkle the remaining cheese evenly across the top, followed by your crunchy topping of choice.
  4. Bake to perfection: Bake the casserole in a preheated oven at 350°F (175°C) for about 30-35 minutes or until the topping is golden and bubbly.

Notes

  • Use leftovers creatively: This recipe is perfect for repurposing leftover cooked chicken or vegetables, saving waste and time.
  • Don’t skip the topping: Adding a crunchy layer not only enhances texture but also makes the casserole visually inviting.
  • Adjust creaminess: Add extra broth or milk if you prefer a saucier casserole or keep it thick for a heartier bite.
  • Prep ahead benefits: Assemble the casserole the night before and refrigerate — it will bake beautifully when you’re ready.
  • Fresh herbs boost flavor: Toss in some chopped parsley or thyme for a vibrant aroma and depth.
