  • 4 boneless, skinless chicken breasts or thighs
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning

Instructions

  1. Prepare the Ingredients: Gather all ingredients. Mince the garlic, chop the sun-dried tomatoes if needed, and measure out the cream and chicken broth to ensure a smooth cooking process.
  2. Sauté Garlic and Tomatoes: Heat olive oil in a small skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped sun-dried tomatoes and cook briefly to release their flavors.
  3. Layer Ingredients in the Crockpot: Place the chicken breasts or thighs at the bottom of the crockpot. Pour the sautéed garlic and sun-dried tomatoes over the chicken. Add chicken broth and sprinkle Italian seasoning evenly. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is tender and cooked through.
  4. Add Cream, Cheese, and Spinach: About 30 minutes before serving, stir in the heavy cream, grated Parmesan, and baby spinach. Cover again and allow the spinach to wilt and the sauce to thicken into a creamy consistency.
  5. Finish and Serve: When the sauce is thick and creamy, sprinkle fresh basil leaves on top. Optionally, shred the chicken in the crockpot using two forks for a pulled-chicken style serving. Serve hot with your choice of pasta, rice, or vegetables.
