Ingredients

Scale

Main Ingredients

  • 1.5 to 2 lbs Cube Steak
  • 2 cups Beef Broth
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Paprika
  • 1 cup Tomato Sauce or 1 can (14.5 oz) Diced Tomatoes (optional)

Optional Vegetables

  • 2 Carrots, sliced
  • 1 cup Mushrooms, sliced
  • 1 Bell Pepper, chopped

Thickening Agent

  • 2 tbsp Flour or Cornstarch
  • 23 tbsp Cold Water (for slurry)

Optional Add-ins (Variations)

  • 1 tsp Italian herbs, olives, and marinara (Italian Style)
  • 1/2 cup Diced Green Chilies, 1 tsp Cumin, 1 tsp Chili Powder (Mexican-Inspired)
  • Swap cube steak for 1.5 lbs Mushrooms or Seitan (Vegetarian)
  • Jalapeños or Hot Sauce to taste (Added Heat)

Instructions

  1. Prepare and Season the Meat: Pat your cube steaks dry with paper towels to remove excess moisture. Season both sides generously with salt, pepper, paprika, and any other chosen spices. This step builds a strong flavor base for slow cooking.
  2. Sear the Cube Steak (Optional but Recommended): Heat a skillet over medium-high heat and add a bit of oil. Quickly brown the cube steak for 2-3 minutes per side until a caramelized crust forms. This adds savory depth and better texture but can be skipped for convenience.
  3. Layer Ingredients in the Crock Pot: Place the seasoned (and seared) cube steak at the bottom of your slow cooker. Add chopped onions, minced garlic, and any optional vegetables on top. Pour the beef broth and tomato sauce or diced tomatoes evenly over the ingredients.
  4. Slow Cook Low and Slow: Cover the crock pot and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the cube steak is tender and the flavors meld beautifully.
  5. Thicken the Sauce: About 30 minutes before serving, whisk together the flour or cornstarch with cold water to make a slurry. Stir this mixture into the crock pot to thicken the cooking juices into a luscious gravy. Continue cooking until thickened.

Notes

  • Pat cube steak dry before searing to develop a good crust and improve texture.
  • Use quality beef broth to enhance the richness and depth of the sauce.
  • For the most tender meat, cook on low heat for the full recommended time.
  • Avoid overcrowding the slow cooker to allow even cooking and flavor circulation.
  • Taste and adjust seasoning with salt, herbs, or pepper before serving for balanced flavor.
