Ingredients

Scale

Protein

  • 1.5 to 2 lbs chicken breast or thighs (lean)

Vegetables

  • 1 cup canned or fresh corn kernels
  • 1 medium onion, diced
  • 2 garlic cloves, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, diced (optional)

Liquids & Broth

  • 4 cups chicken broth

Seasonings & Herbs

  • Salt, to taste
  • Black pepper, to taste
  • Herbs such as thyme, rosemary, or cilantro, to taste

Instructions

  1. Prepare the Ingredients: Dice the onions, chop the garlic, slice the carrots and celery, and cut potatoes if using. Rinse the chicken and pat dry.
  2. Combine Everything in the Slow Cooker: Place the chicken, vegetables, corn, and broth into the slow cooker. Add salt, pepper, and your choice of herbs. Stir to combine the ingredients evenly.
  3. Cook on Low: Set your slow cooker on low and let it cook for 6 to 8 hours, allowing the flavors to meld and the chicken to become tender enough to shred easily.
  4. Shred the Chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker, mixing it back into the soup for a consistent texture.
  5. Final Taste and Adjustments: Taste the soup and add additional seasoning as needed. If desired, add fresh herbs or a squeeze of lemon juice to brighten the flavor before serving.

Notes

  • Use bone-in chicken pieces for extra richness and flavor.
  • Adjust salt and pepper gradually to avoid under or overseasoning.
  • Layer harder vegetables like carrots and potatoes at the bottom of the slow cooker for even cooking.
  • If using fresh corn, add it during the last hour to keep it crisp and vibrant.
  • Allow the soup to rest for 10 minutes off heat before serving to enhance flavors.
