Ingredients

Scale

For the Patties

  • 1 lb ground beef (80/20 blend)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp fresh thyme leaves

For the Caramelized Onions

  • 3 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 cup beef broth
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp fresh thyme leaves

For Assembly

  • 4 slices Gruyère cheese
  • 4 French buns or brioche buns
  • Butter, for toasting buns
  • Fresh thyme or parsley, for garnish (optional)

Instructions

  1. Caramelize the Onions: Slice yellow onions thinly and cook slowly over medium-low heat in butter and olive oil. Stir frequently to prevent burning and let the onions turn golden brown and sweet, about 30-40 minutes. Add beef broth and fresh thyme during cooking to deepen flavor. Season with salt and pepper to taste.
  2. Prepare the Patties: In a bowl, gently mix the ground beef with salt, pepper, and fresh thyme leaves. Form patties slightly larger than buns to account for shrinkage while cooking. Avoid overpacking to keep patties juicy.
  3. Sear and Cook the Burgers: Heat a grill or skillet to medium-high. Cook patties for 3-4 minutes per side for medium doneness. Just before finishing, pile caramelized onions on each patty and top with Gruyère cheese. Cover the pan for 1-2 minutes to melt the cheese perfectly.
  4. Toast the Buns: Lightly butter the buns and toast on the grill or in a pan until golden brown, providing a crunchy texture that complements the burger.
  5. Assemble and Serve: Place the cheese and onion topped patty on the bottom bun and cap with the toasted top bun. Garnish with fresh herbs if desired and serve immediately to enjoy the melty, flavorful burger.

Notes

  • Caramelize onions slowly over medium-low heat to develop sweetness without burning.
  • Mix ground beef gently to avoid dense, tough patties.
  • Use a cast iron skillet for even heat and better sear on patties and onions.
  • Add Gruyère cheese after flipping the patties to melt perfectly without burning.
  • Toast buns just before assembly to keep them crispy and prevent sogginess from juicy toppings.
