Ingredients

Scale

Main Ingredients

  • 4 cups diced Russet potatoes (about 34 medium potatoes)
  • 34 garlic cloves, minced
  • 2 cups shredded whole milk mozzarella cheese, divided
  • 2 tablespoons butter
  • 1/2 cup heavy cream or milk
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • 2 tablespoons fresh parsley or thyme, chopped
  • 1/2 cup chopped spinach, mushrooms, or bell peppers (for vegetable boost)
  • Red pepper flakes or diced jalapeños (for spicy kick)
  • Fontina or gouda cheese as mozzarella substitute

Instructions

  1. Prepare the Potatoes: Peel and dice the potatoes into uniform cubes. Boil them in salted water until tender but still firm, about 10-15 minutes. Drain and set aside to prevent mushiness during baking.
  2. Sauté the Garlic: Heat the butter in a skillet over medium heat. Add the minced garlic and cook slowly until fragrant and lightly golden, about 2-3 minutes, to bring out its natural sweetness and reduce sharpness.
  3. Mix the Filling: In a large bowl, combine the boiled potatoes, sautéed garlic with butter, heavy cream or milk, salt, pepper, and most of the shredded mozzarella cheese. Gently toss the mixture so the cheese melts slightly and binds the filling.
  4. Assemble the Pie: Preheat the oven to 375°F (190°C). Grease a pie dish with butter or non-stick spray. Pour the potato mixture into the dish and evenly smooth the top. Sprinkle the remaining mozzarella evenly over the surface to create a golden, bubbly crust when baked.
  5. Bake Until Golden: Place the pie in the preheated oven and bake for 25-30 minutes until the cheese topping is bubbling and golden brown. Remove from oven and let cool for 5-10 minutes before slicing to ensure clean, firm slices for serving.

Notes

  • Use fresh mozzarella for a creamier melt compared to pre-shredded cheese.
  • Do not overcook the potatoes to keep the pie’s structure intact.
  • Sauté garlic slowly on low heat to prevent bitterness and enhance sweetness.
  • Allow the pie to rest after baking to make slicing easier and presentation neater.
  • Sprinkle fresh herbs before serving for added aroma and color.
