Instructions

  1. Prepare the Steak: Season the steak generously with salt and pepper. Heat a skillet over medium-high heat with olive oil. Sear the steak for 3–4 minutes on each side, depending on thickness, until desired doneness. Remove from pan and let rest before slicing thinly against the grain.
  2. Cook the Pasta: While the steak rests, bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente. Reserve half a cup of pasta water and drain the rest.
  3. Make the Garlic Sauce: In the same pan, reduce heat to medium-low. Add butter and olive oil, then sauté minced garlic gently for 1–2 minutes until fragrant but not browned. Slowly pour in the reserved pasta water to deglaze the pan and form a silky sauce.
  4. Combine Pasta and Steak: Add drained pasta to the pan and toss to coat in the garlic sauce. Return sliced steak to the pan and gently mix to combine without breaking the meat. Adjust seasoning with salt and pepper as needed.
  5. Finish and Serve: Turn off the heat. Sprinkle freshly grated Parmesan cheese and chopped parsley on top. Toss everything lightly and serve immediately while warm and inviting.
