Instructions

  1. Prepare the Rosemary Syrup: Combine equal parts sugar and water in a small saucepan. Add 3 to 4 fresh rosemary sprigs and simmer gently until the sugar dissolves and the mixture becomes fragrant. Remove from heat and let the syrup cool completely before using.
  2. Juice the Grapefruit and Lime: Freshly squeeze the grapefruit and lime to extract juice. Strain to remove any pulp if a smoother texture is preferred.
  3. Mix the Cocktail: In a cocktail shaker, combine 2 oz tequila blanco, 3 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and 0.75 oz cooled rosemary syrup. Add ice and shake vigorously until well chilled.
  4. Prepare the Glass: Optionally, rub a lime wedge around the rim of your glass and dip it into salt to create a salted rim. Fill the glass with ice cubes to keep the cocktail cold.
  5. Assemble and Garnish: Strain the shaken cocktail mixture into the prepared glass over ice. Top with 2 oz club soda and stir gently to combine. Garnish with a fresh rosemary sprig and a wedge of grapefruit for a stunning presentation.
