Ingredients

Scale

Shrimp and Marinade

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Piccata Sauce

  • 3 tbsp butter
  • 2 tbsp capers, drained
  • 1/4 cup white wine or broth
  • 1 tbsp fresh lemon juice
  • 1 tsp olive oil

Garnishes and Extras

  • 2 tbsp fresh parsley, chopped
  • Wooden or metal skewers

Instructions

  1. Marinate the Shrimp: In a bowl, whisk together fresh lemon juice, minced garlic, olive oil, salt, and pepper. Toss the peeled and deveined shrimp in this marinade and let them sit for at least 20 minutes to soak in all the bright, zesty flavors.
  2. Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling. Thread the marinated shrimp onto the skewers, leaving a little space between each piece for even cooking.
  3. Grill the Shrimp: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 2-3 minutes on each side, until the shrimp are opaque and lightly charred. Be careful not to overcook to keep them juicy.
  4. Make the Piccata Sauce: While the shrimp grill, melt butter in a skillet over medium heat. Add capers and a splash of white wine or broth, stirring gently to combine. Finish with extra lemon juice and a touch of olive oil, letting the sauce slightly thicken.
  5. Combine and Serve: Drizzle the warm piccata sauce over the grilled shrimp skewers and sprinkle generously with freshly chopped parsley. Serve immediately for the freshest, brightest flavor experience.

Notes

  • Choose fresh shrimp or properly thawed shrimp for best texture and taste.
  • Do not over-marinate shrimp; 20-30 minutes is sufficient to avoid mushy texture.
  • Preheat the grill well to get nice grill marks and prevent sticking.
  • Use salt sparingly at first since capers add saltiness to the dish.
  • If you do not have a grill, a hot grill pan or broiler can be used as alternatives.
