Instructions

  1. Prepare the marinade and sauce: In a bowl, whisk together soy sauce, pineapple juice, brown sugar, minced garlic, grated ginger, rice vinegar, and sesame oil. This mixture will serve as both marinade and sauce glaze.
  2. Marinate the chicken: Place the chicken thighs in a shallow dish or resealable plastic bag and pour half of the teriyaki mixture over them. Allow to marinate for at least 15 minutes to absorb the flavors.
  3. Cook the chicken: Heat a skillet over medium-high heat with a bit of oil. Remove chicken from the marinade and place skin-side down in the skillet. Cook until the skin is golden and crisp, about 5-7 minutes. Flip and cook the other side until fully cooked, about 5 more minutes.
  4. Reduce the sauce: While the chicken is cooking, pour the remaining teriyaki sauce into a small saucepan. Mix cornstarch with water to create a slurry, then stir into the sauce. Bring to a simmer and cook until sauce becomes thick and glossy.
  5. Glaze the chicken: Lower the heat on the skillet, pour the thickened sauce over the chicken pieces, and spoon the sauce repeatedly to coat them in a sticky glaze. Let it sit for 1-2 minutes to cling well.
  6. Garnish and serve: Sprinkle chopped green onions and optional toasted sesame seeds over the glazed chicken. Serve immediately with steamed jasmine or brown rice and your favorite sides.
