Instructions

  1. Prepare the Dough: Combine 2 1/2 cups flour and salt in a bowl. Cut in cold, cubed butter using a pastry cutter or your hands until the mixture looks like coarse crumbs. Gradually add ice water, mixing until the dough just holds together. Divide dough into two disks, wrap in plastic, and chill for at least 1 hour.
  2. Make the Filling: In a large bowl, gently toss fresh blueberries with sugar, 2 tablespoons flour, lemon juice, and lemon zest. Stir carefully to keep berries whole and allow flour to absorb juice for thickening.
  3. Roll Out the Dough: On a floured surface, roll out one dough disk to fit the pie dish. Transfer gently to the dish, pressing lightly to cover the base evenly. Trim any excess dough from the edges.
  4. Add the Filling: Pour blueberry filling into the prepared crust, spreading evenly for consistent baking and appearance.
  5. Top the Pie: Roll out the second dough disk and place whole as a top crust or cut into strips to form a lattice. Pinch edges to seal and trim excess. Brush entire crust with an egg wash made from beaten egg and water for a golden, glossy finish.
  6. Bake to Perfection: Preheat oven to 375°F (190°C). Place pie on middle rack and bake 45 to 55 minutes until crust is golden and filling is bubbling. Rotate halfway through for even browning.
