Pastry Dough
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 3/4 cup cold unsalted butter, cut into small cubes
- 1/4 cup cold water
Fillings
- Fruit preserves or cream cheese (approx. 1 tablespoon per strudel)
Icing Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk or lemon juice
Finishing
- 1 egg, beaten (for egg wash)
- Prepare the Dough: In a large bowl, combine all-purpose flour, granulated sugar, and salt. Add cold butter cubes, blending with fingers or a pastry cutter until mixture resembles coarse crumbs. Gradually mix in cold water until dough forms without stickiness. Wrap dough in plastic and chill for 30 minutes.
- Roll Out the Dough: Lightly flour a surface and roll the chilled dough into a large rectangle about 1/8 inch thick. Cut the dough into even squares to form strudel pockets.
- Add the Filling: Place about one tablespoon of your chosen filling (fruit preserves or cream cheese) in the center of each dough square, avoiding overfilling to prevent leaks.
- Seal the Strudels: Fold each square into a rectangle or triangle enclosing the filling. Press edges firmly with a fork to seal and create a decorative crimp.
- Brush and Bake: Preheat oven to 375°F (190°C). Lightly brush the tops of each strudel with beaten egg for a glossy finish. Arrange on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown and puffed.
- Prepare the Icing: While baking, whisk powdered sugar with milk or lemon juice until smooth and drizzle-able. Adjust consistency as needed.
- Glaze and Serve: After baking and slight cooling, generously drizzle icing over each strudel. Serve warm or at room temperature.
Notes
- Keep ingredients cold to ensure flaky texture.
- Do not overfill to avoid filling leaks.
- Use parchment paper on baking sheets for easy cleanup.
- Rest dough after mixing for better texture.
- Customize icing by adding vanilla or almond extract for extra flavor.
