Lasagna Soup

Lasagna Soup

Lasagna Soup is a comforting and quick twist on the classic Italian lasagna, delivering rich flavors of ground meat, tomato sauce, and cheesy layers in a warm, hearty soup. Perfect for busy weeknights, it combines broken lasagna noodles, savory broth, and creamy cheeses into a one-pot meal that’s easy to make, customizable, and family-friendly.

Ingredients

Scale

Meat and Aromatics

  • 1 lb ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Soup Base

  • 28 oz crushed tomatoes
  • 4 cups chicken or beef broth
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste

Pasta and Cheese

  • 68 lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese, plus extra for garnish

Herbs and Garnish

  • ¼ cup fresh basil, chopped
  • Olive oil, for cooking and optional garnish

Instructions

  1. Brown the Meat and Sauté Aromatics: Heat 1-2 tablespoons olive oil in a large pot over medium heat. Add ground meat and cook until nicely browned, breaking it apart as it cooks. Once browned, add chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-5 minutes.
  2. Add Tomatoes, Broth, and Seasonings: Pour in crushed tomatoes and broth to form the soup base. Stir in Italian seasoning, salt, and pepper to taste. Bring to a gentle boil, then reduce heat to low and simmer for about 10 minutes to meld flavors.
  3. Add Broken Lasagna Noodles: Break uncooked lasagna noodles into bite-sized pieces and add directly into the simmering soup. Cook until noodles are tender, about 7-10 minutes, stirring occasionally to prevent sticking.
  4. Stir in the Cheeses and Fresh Basil: Lower heat and add spoonfuls of ricotta cheese, gently stirring to create creamy pockets. Mix in shredded mozzarella and chopped fresh basil for bright Italian flavor and melty texture.
  5. Serve Hot and Garnish: Ladle soup into bowls and garnish with extra Parmesan cheese, fresh herbs, and a drizzle of olive oil if desired. Serve immediately while warm and melty.

Notes

  • Use freshly cooked pasta for best texture; avoid reheated or overcooked noodles to prevent mushiness.
  • Simmer the soup gently to deepen flavors without breaking down ingredients.
  • Season the soup gradually, tasting as you go to balance salt and pepper.
  • Don’t skip the ricotta cheese; it adds signature creamy pockets to the soup.
  • Fresh herbs like basil and oregano brighten and enhance the authentic Italian flavors.
