  • 1 1/4 cups all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 1 egg wash (1 egg beaten with 1 tbsp water)

Instructions

  1. Prepare the Tart Dough: Combine cold butter, powdered sugar, and all-purpose flour (or gluten-free alternative) until mixture resembles coarse crumbs. Add egg yolk and mix to bind. Chill the dough for at least 30 minutes to ensure a tender, flaky crust.
  2. Blind Bake the Tart Shell: Roll out the chilled dough and press into a tart pan. Cover with parchment paper and fill with pie weights to prevent puffing. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until edges are golden and firm.
  3. Make the Mango Curd: In a saucepan, combine fresh mango puree, sugar, and lemon juice over medium heat. Slowly whisk in egg yolks and cook gently, stirring constantly until thickened and smooth. Remove from heat and stir in butter until fully incorporated for a silky texture.
  4. Assemble the Tart: Pour the warm mango curd into the pre-baked tart shell and smooth the surface with a spatula. Let it cool to room temperature, then refrigerate for at least 2 hours to set completely.
