Ingredients

Scale

Salmon

  • 4 salmon fillets, skin-on, fresh
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 2 tablespoons butter (plus extra if needed)
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • A handful of fresh basil leaves
  • Pinch of red pepper flakes
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preparing the Salmon: Pat the salmon fillets dry and season both sides generously with salt and pepper. Heat olive oil and butter in a skillet over medium-high heat, then sear the salmon skin-side down until it gets crispy, about 4-5 minutes. Flip carefully and cook the other side for an additional 2-3 minutes. Remove salmon and set aside once cooked through but still moist.
  2. Making the Sauce: In the same skillet, add a bit more butter if needed and toss in minced garlic, cooking until fragrant but not browned. Stir in chopped sun-dried tomatoes and cook for 1-2 minutes. Pour in the heavy cream and bring it to a gentle simmer, then stir in grated Parmesan cheese until melted and the sauce thickens slightly.
  3. Bringing It All Together: Add fresh basil leaves and a pinch of red pepper flakes to the sauce, then squeeze in some fresh lemon juice. Return the salmon fillets to the pan, spooning the sauce over the top to coat them evenly. Allow everything to warm through for a minute or two, so the flavors blend beautifully.

Notes

  • Use fresh salmon for the most tender and flavorful dish.
  • Do not overcook the salmon — it’s best when slightly pink in the center for moist texture.
  • Sear the salmon skin-side first to lock in moisture and get a crispy crust.
  • Make the sauce in the same pan to use the salmon drippings for added depth of flavor.
  • Allow the cream sauce to simmer and thicken slightly for a silky texture.
