Instructions

  1. Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef and pork blend, breadcrumbs, finely chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, and season with salt, pepper, thyme, and parsley. Mix gently until just combined to avoid a tough texture.
  2. Shape and Bake the Meatloaf: Transfer the meat mixture into a loaf pan or shape it by hand on a baking sheet. Bake in a preheated oven at 350°F (175°C) for 50-60 minutes until the internal temperature reaches 160°F (70°C). Let it rest while preparing the gravy.
  3. Make the Mushroom Gravy: In a skillet, melt butter over medium heat and sauté sliced mushrooms until golden and tender. Stir in flour and cook for about one minute to remove the raw flour taste. Gradually whisk in beef broth and simmer until the gravy thickens. Season with salt, pepper, thyme, and parsley.
  4. Serve Together: Slice the rested meatloaf and ladle the warm mushroom gravy over each slice. Garnish with fresh parsley or thyme if desired, and serve with preferred sides.
