Ingredients

Bread and Filling

  • White bread, sturdy and crustless slices – quantity as needed
  • Thinly sliced ham – enough to layer mini sandwiches
  • Gruyère cheese, grated – about 1 to 1½ cups

Béchamel Sauce

  • Butter – 2 tablespoons
  • Flour – 2 tablespoons
  • Milk – 1 to 1¼ cups
  • Salt – to taste
  • Black pepper – to taste
  • Nutmeg – a pinch

For Toasting and Topping

  • Butter, for toasting bread – as needed
  • Additional grated Gruyère cheese – for topping before broiling

Instructions

  1. Preparing the Béchamel Sauce: Melt 2 tablespoons of butter in a saucepan over medium heat. Stir in 2 tablespoons of flour and cook for about 2 minutes, ensuring the roux doesn’t brown. Gradually whisk in 1 to 1¼ cups of milk until the sauce thickens and coats the back of a spoon. Season with salt, black pepper, and a pinch of nutmeg. Remove from heat and set aside.
  2. Assembling the Mini Sandwiches: Cut the crustless white bread slices into small squares or rounds. Spread a thin layer of béchamel sauce on one side of each bread piece. Layer thinly sliced ham and grated Gruyère cheese over the béchamel. Spread another layer of béchamel on a second bread piece and sandwich them together with béchamel sides facing inward.
  3. Toasting Until Crispy: Heat a skillet or grill pan over medium heat. Lightly butter the outside of each mini sandwich. Toast the sandwiches for 3 to 4 minutes on each side until the bread is golden brown and crispy, and the cheese inside has melted.
  4. Final Béchamel Topping and Broil: Place the toasted mini sandwiches on a baking sheet. Spoon extra béchamel sauce on top of each sandwich and sprinkle with additional grated Gruyère cheese. Broil in a preheated oven for 2 to 3 minutes until the tops are bubbly and golden brown. Serve immediately while hot.
