Instructions

  2. Mix the wet ingredients: In a separate bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until smooth and well combined.
  3. Combine wet and dry mixtures: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing to keep the muffins tender.
  4. Fold in the berries: Carefully fold in the mixed berries, fresh or frozen, to distribute evenly without breaking them down.
  5. Fill muffin cups and bake: Divide the batter evenly into the muffin cups, filling each about three-quarters full. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
