  • 4 slices rye bread
  • 4 slices Swiss cheese
  • 1 medium onion, thinly sliced
  • 3 tbsp butter, divided (for bread and onions)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: mustard or thousand island dressing

Instructions

  1. Prepare the Onions: Peel and thinly slice the onion. Heat 1 tablespoon of butter in a skillet over medium heat. Sauté the onions gently until soft and golden brown, about 10-12 minutes, stirring occasionally to prevent burning and ensure even caramelization.
  2. Form and Season the Beef Patties: Divide the ground beef into two equal portions and shape into slightly oval patties roughly the size of the bread slices. Season both sides liberally with salt and pepper.
  3. Cook the Beef Patties: Place patties in a hot skillet or griddle over medium-high heat. Cook each side for 3-4 minutes until well browned but still juicy. Avoid pressing down on the patties.
  4. Assemble the Patty Melt: Butter one side of each rye bread slice. On the non-buttered side, layer Swiss cheese, cooked patty, a generous amount of caramelized onions, and another slice of Swiss cheese. Top with the second bread slice, buttered side facing out.
  5. Grill the Sandwich: Heat a skillet over medium-low heat. Place the assembled sandwich in the pan, press gently with a spatula, and cook for 3-4 minutes per side until the bread is crispy and golden and the cheese has melted.
  6. Serve and Enjoy: Remove from pan once golden and melty. Let it rest for a minute, slice in half, and serve immediately.
