Instructions

  1. Prepare the Peanut Butter Mixture: Combine creamy peanut butter, softened butter, vanilla extract, and powdered sugar in a mixing bowl. Stir together until a smooth and slightly firm dough forms, suitable for rolling into balls.
  2. Shape the Peanut Butter Balls: Using your hands or a small cookie scoop, form the mixture into bite-sized balls. Place them evenly on a parchment-lined baking sheet and chill in the refrigerator for about 30 minutes until set.
  3. Melt the Chocolate Coating: While the balls chill, melt the chocolate chips with vegetable shortening or coconut oil over low heat on the stove or in the microwave, stirring frequently until silky and smooth.
