Ingredients

Scale

Muffin Batter

  • 1 3/4 cups All-Purpose Flour (or gluten-free blend)
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/4 teaspoon Ground Cloves
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1 cup Pumpkin Puree (canned or fresh)
  • 1/2 cup Melted Butter (or plant-based butter for vegan)
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 teaspoon Vanilla Extract

Streusel Topping

  • 1/2 cup All-Purpose Flour
  • 1/2 cup Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 1/4 cup Cold Butter, cubed

Instructions

  1. Prepare the Streusel Topping: Combine the flour, brown sugar, cinnamon, and cold cubed butter. Mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Chill the streusel to maintain its crumbly texture while preparing the batter.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt to evenly distribute the spices.
  3. Combine Wet Ingredients: In another bowl, beat the eggs with the pumpkin puree, melted butter, granulated sugar, brown sugar, and vanilla extract until smooth and well blended.
  4. Bring Batter Together: Gradually fold the dry ingredients into the wet mixture, stirring gently and just until combined to keep the muffins tender and moist. Avoid overmixing.
  5. Fill Muffin Cups and Add Streusel: Evenly divide the batter into a lined or greased muffin tin. Generously sprinkle the chilled streusel topping over each muffin cup for a crunchy finish.
  6. Bake to Perfection: Bake in a preheated oven at 350°F (175°C) for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean. Start checking at 18 minutes to avoid overbaking.

Notes

  • Use room temperature ingredients for better blending and texture.
  • Do not overmix the batter to keep muffins fluffy and tender.
  • Keep butter for streusel cold to achieve a crumbly topping.
  • Use paper liners or grease the muffin tin to make removal easy.
  • Test doneness starting at 18 minutes as oven temperatures vary.
