Ingredients

Scale

Brownie Batter Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour (or gluten-free baking blend for gluten-free)
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Stuffing

  • 12 Reese’s peanut butter cups (unwrapped)

Peanut Butter Frosting

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup creamy peanut butter
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 12 tablespoons milk (optional, to adjust consistency)

Instructions

  1. Prepare the Brownie Batter: Melt the butter and mix it with sugar and cocoa powder until smooth. Beat in the eggs one at a time, followed by vanilla extract, then gently fold in the flour and salt until just combined to create a thick, fudgy batter.
  2. Assemble the Stuffed Brownies: Pour half of the brownie batter into a greased baking pan and spread evenly. Arrange unwrapped Reese’s peanut butter cups evenly on top of the batter. Pour the remaining batter over the peanut butter cups, covering them completely to seal in the gooey center.
  3. Bake to Perfection: Bake the brownies in a preheated oven at 350°F (175°C) for 30-35 minutes. Check doneness with a toothpick inserted into the center; it should come out with a few moist crumbs but not wet batter, ensuring fudgy brownies.
  4. Make the Peanut Butter Frosting: While the brownies cool, whip softened butter, creamy peanut butter, powdered sugar, vanilla extract, and a pinch of salt together until light and fluffy. Add milk as needed to reach a smooth, spreadable consistency.
  5. Frost and Serve: Once the brownies have fully cooled, generously spread the peanut butter frosting on top. For an extra touch, sprinkle crushed Reese’s cups or chocolate shavings over the frosting for added texture and visual appeal.

Notes

  • Use room temperature ingredients to ensure even mixing and smooth batter and frosting.
  • Do not overmix the batter to keep brownies tender by preventing too much gluten development.
  • Cool brownies completely before frosting to prevent melting and sliding.
  • Use quality peanut butter for the best flavor and creamy frosting texture.
  • For clean slices, warm a knife in hot water and wipe between cuts to avoid crumbling.
