  • 8 oz sliced mushrooms
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups beef broth

Instructions

  1. Prepare the Patties: In a large bowl, gently combine ground beef, half of the finely chopped onions, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix just until combined to avoid tough patties, then shape into oval patties about 3/4 inch thick.
  2. Brown the Patties: Heat 1 tablespoon butter and oil in a skillet over medium-high heat. Add the patties and cook for about 4 minutes per side until nicely browned but not fully cooked. Remove patties from the skillet and set aside.
  3. Make the Mushroom Gravy: In the same skillet, add remaining butter if needed. Sauté sliced mushrooms and the remaining chopped onions until softened and golden brown. Sprinkle flour evenly over the vegetables and stir constantly to form a roux, cooking for 1-2 minutes to eliminate the raw flour taste.
  4. Add Liquid and Simmer: Slowly whisk in the beef broth while scraping the browned bits off the bottom of the pan to deepen the flavor. Bring the gravy to a simmer, then return patties to the skillet. Cover and let cook together for 10-12 minutes, allowing patties to finish cooking and soak up the gravy.
  5. Finish and Serve: Taste and adjust seasoning with salt and pepper as needed. Serve the Salisbury Steak hot, generously smothered with the mushroom and onion gravy.
