Instructions

  1. Prepare the Ingredients: Drain and rinse the sauerkraut thoroughly to reduce its tanginess and excess moisture. Chop the onion and garlic finely. If using potatoes, peel and slice them thinly to ensure even cooking.
  2. Brown the Meat and Sauté Aromatics: In a large skillet, melt butter or heat oil over medium heat. Add the ground beef or turkey and cook until browned and crumbly. Drain excess fat if needed. Add the chopped onions and garlic to the skillet and cook until softened and fragrant.
  3. Combine Main Ingredients: In a large mixing bowl, combine the browned meat mixture, sauerkraut, sour cream or Greek yogurt, and half of the shredded cheese. Season the mixture with salt and pepper. Gently fold in the noodles or cooked potatoes, ensuring an even mix.
  4. Assemble the Casserole: Preheat your oven to 350°F (175°C). Grease a casserole dish and spread the combined mixture evenly into it. Sprinkle the remaining shredded cheese evenly on top to create a golden, bubbly crust when baked.
  5. Bake to Perfection: Bake the casserole uncovered for 30 to 40 minutes, until the cheese is golden brown and the casserole is heated through. Remove from the oven and allow it to rest for 5 minutes before serving to set and make slicing easier.
