  • 2 bell peppers (red, yellow, or orange), chopped
  • 1 large red onion, sliced
  • 1 cup cherry tomatoes

Instructions

  1. Prepare the marinade: In a bowl, combine the harissa paste, olive oil, minced garlic, lemon juice, salt, and black pepper. Mix well to create a flavorful base for the chicken and vegetables.
  2. Coat the chicken and vegetables: Toss the chicken thighs and chopped vegetables (bell peppers, red onion, cherry tomatoes) in the harissa marinade until everything is evenly coated with the vibrant sauce.
  3. Arrange on the sheet pan: Spread the chicken and vegetables in a single layer on a lined sheet pan, maintaining space between pieces for even roasting and caramelization.
  4. Roast to perfection: Bake in a preheated oven at 425°F (220°C) for 30-35 minutes, or until the chicken is cooked through (internal temperature 165°F or 75°C) and the vegetables are tender with slightly charred edges.
  5. Finish with fresh lemon juice: Once out of the oven, drizzle additional fresh lemon juice over the dish to brighten the flavors before serving immediately.
