Ingredients

Scale

Protein

  • 2 skinny chicken breasts (lean, skinless)

Pasta

  • 8 ounces whole wheat or gluten-free fettuccine

Sauce

  • 1 cup low-fat Greek yogurt
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Garnish

  • 2 tablespoons fresh parsley, chopped
  • Extra Parmesan cheese (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, then add the fettuccine and cook according to package instructions until al dente. Drain the pasta and set aside, reserving a bit of the pasta water for later use.
  2. Prepare the chicken: While the pasta cooks, season the chicken breasts with salt, pepper, garlic powder, and onion powder. Heat a non-stick skillet over medium heat and cook the chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove from heat and let the chicken rest before slicing thinly.
  3. Make the light Alfredo sauce: In the same skillet, reduce the heat to low and add the low-sodium chicken broth to deglaze any browned bits on the bottom. Stir in the low-fat Greek yogurt and grated Parmesan cheese, mixing gently until smooth and creamy. If the sauce is too thick, add reserved pasta water one tablespoon at a time until the desired consistency is reached.
  4. Combine pasta and chicken: Add the cooked fettuccine and sliced chicken back into the skillet with the sauce. Toss gently to coat everything evenly and heat through for about a minute, ensuring every strand of pasta is covered with the creamy sauce.
  5. Garnish and serve: Finish the dish by sprinkling chopped fresh parsley and additional Parmesan cheese if desired. Serve immediately to enjoy the best flavor and texture.

Notes

  • Do not overcook the chicken to keep it juicy and tender.
  • Use reserved pasta water to help thicken and bind the sauce naturally.
  • Stir Greek yogurt gently and use low heat to avoid curdling the sauce.
  • Freshly grate Parmesan cheese for better melting and authentic flavor.
  • Finish with fresh herbs like parsley or basil to enhance aroma and brightness.
