Instructions

  1. Prepare the Chimichurri: Finely chop fresh parsley, cilantro, and garlic. In a bowl, combine them with red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Stir thoroughly and let it sit for at least 10 minutes to allow the flavors to meld.
  2. Cook the Rice: Cook the long grain rice according to package instructions. Once cooked, fluff with a fork and keep warm while preparing other components.
  3. Season and Cook the Skirt Steak: Generously season skirt steak with salt and black pepper. Heat a skillet or grill pan over high heat until very hot. Cook the steak for 3-4 minutes per side depending on thickness and desired doneness. Remove from heat and let the steak rest for a few minutes before slicing thinly against the grain.
