Ingredients

Scale

Filling

  • 68 fresh ripe peaches, peeled, pitted, and sliced
  • 3/4 cup granulated sugar (for tossing peaches)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 tablespoon lemon juice
  • 12 teaspoons cornstarch (optional, for thickening if peaches are very juicy)

Batter

  • 1 cup all-purpose flour (or gluten-free baking blend for gluten-free option)
  • 1 cup granulated sugar
  • 1 teaspoon baking powder (gluten-free if needed)
  • 1/2 teaspoon salt
  • 1 cup whole milk (or plant-based milk for vegan option)
  • 1/2 cup unsalted butter, melted (or vegan butter alternative)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon ground cinnamon (optional)

Instructions

  1. Prepare the Peaches: Peel, pit, and slice fresh peaches. Toss them gently with 3/4 cup granulated sugar, a pinch of ground cinnamon (if using), lemon juice, and cornstarch if needed to thicken the filling. Let the mixture sit to absorb flavors.
  2. Make the Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until combined. Stir in the milk and melted butter until the batter is smooth and slightly thickened, taking care not to overmix to keep the batter light and tender.
  3. Assemble the Cobbler: Butter a baking dish generously. Pour the batter evenly into the dish. Spoon the peach mixture evenly over the batter without stirring—the batter will rise around the peaches as it bakes.
  4. Bake the Cobbler: Place the baking dish in a preheated oven at 375°F (190°C). Bake for 40-45 minutes, or until the top is golden brown and bubbly. Keep an eye from 35 minutes on to avoid overbaking.
  5. Let it Rest: Remove from the oven and allow the cobbler to cool for 10-15 minutes. This resting time helps the peach juices thicken and the flavors to meld.

Notes

  • Use fresh, ripe peaches for the best flavor and texture; blanch peaches in boiling water for 30 seconds, then transfer to ice water to peel easily.
  • Butter the baking dish generously to ensure a golden crust and to prevent sticking.
  • Do not overmix the batter; stir just until combined for a tender result.
  • If your peaches are especially juicy, toss them with cornstarch to avoid a soupy filling.
  • Check the cobbler around 35 minutes during baking as ovens vary.
