Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Flour or breadcrumbs for coating (optional, for extra crunch)
  • Oil for frying or cooking spray for baking

Nacho Cheese Sauce

  • 1 cup nacho cheese sauce

Crunchy Toppings

  • 1 cup tortilla chips, crushed

Fresh Toppings

  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1 cup shredded lettuce

Bread

  • 4 soft sandwich buns

Additional

  • Salsa or hot sauce for drizzling (optional)

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness for uniform cooking. Season each piece thoroughly with the chili powder, paprika, cumin, cayenne, salt, and pepper. Optionally, coat the chicken in flour or breadcrumbs for extra crispiness. Fry in oil over medium heat or bake in a preheated oven at 400°F (200°C) until the chicken is golden, crispy, and cooked through (about 6–8 minutes per side).
  2. Crush the Tortilla Chips: While the chicken cooks, place tortilla chips in a bag or bowl and crush them into bite-sized pieces to add crunchy texture to your sandwich.
  3. Warm the Nacho Cheese Sauce: Heat the nacho cheese sauce in a small saucepan over low heat until it’s creamy and smooth, stirring occasionally to prevent burning.
  4. Assemble the Sandwich: Lightly toast the sandwich buns to prevent sogginess and enhance flavor. Layer each bun with a crispy chicken breast, spoon warm nacho cheese sauce over it, sprinkle crushed tortilla chips on top, then add fresh toppings like shredded lettuce, diced tomatoes, and sliced jalapeños. Drizzle with salsa or hot sauce if desired.
  5. Serve and Enjoy: Serve the sandwiches immediately while the chicken remains crispy and the cheese warm. Pair with your favorite sides and dig in!

Notes

  • Use fresh veggies and high-quality chips for noticeable flavor and crunch improvements.
  • Do not overcrowd the pan when cooking the chicken to ensure even browning and crispiness.
  • Add the cheese sauce before the chips to keep them crunchy and prevent sogginess.
  • Adjust the spice level gradually, starting mild and increasing to taste.
  • Always toast buns lightly to prevent sogginess and enhance flavor.
