For the Dough

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 cup warm milk
  • 2 tbsp unsalted butter, melted
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp garlic powder (optional)
  • ½ tsp onion powder (optional)
  • 2 large eggs, room temperature

For the Filling

  • 4 cups fresh spinach, washed and finely chopped
  • 1 cup mozzarella cheese, grated
  • ½ cup feta cheese, crumbled

For Finishing

  • 1 egg, beaten (for egg wash, optional)

Instructions

  1. Prepare the Dough: Activate the yeast by dissolving it with a pinch of sugar in warm milk. Let it sit for 5-10 minutes until frothy. In a large bowl, combine flour, salt, onion powder, and garlic powder. Add the yeast mixture, eggs, and melted butter. Mix until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic. Cover with a damp cloth and let rise in a warm place for about 1 hour or until doubled in size.
  2. Prepare the Spinach and Cheese Filling: While the dough rises, sauté chopped spinach in a non-stick pan until wilted and excess moisture evaporates. Let cool completely. In a bowl, mix the cooled spinach with grated mozzarella and crumbled feta cheeses, ensuring even distribution.
  3. Shape the Rolls: Punch down the risen dough to release air. Divide into equal portions. Flatten each piece into a small circle, spoon filling into the center, then fold and seal seams to encase filling. Shape into smooth rolls and place seam side down on a parchment-lined baking tray.
  4. Second Rise and Bake: Cover rolls loosely and let rise for 30-40 minutes. Preheat oven to 375°F (190°C). Optionally brush rolls with egg wash for a golden crust. Bake for 20-25 minutes until golden brown and hollow sounding when tapped.
  5. Cool and Enjoy: Remove rolls from the oven and cool at least 10 minutes before serving to allow filling to set.
