Cheesecake Filling
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 cup fresh strawberries, finely chopped
Eggroll Assembly
- 8–10 eggroll wrappers
- Water or 1 beaten egg, for sealing wrappers
Cooking
- Oil for frying (such as vegetable or canola oil) or
- Butter or oil for brushing if baking
- Prepare the Cheesecake Filling: Soften cream cheese at room temperature until creamy and smooth. In a mixing bowl, combine the cream cheese with sugar, vanilla extract, and lemon zest. Gently fold in the finely chopped strawberries to evenly distribute their flavor while keeping their shape.
- Assemble the Eggrolls: Lay eggroll wrappers flat on a clean surface. Place a spoonful of the cheesecake-strawberry mixture near one corner. Roll tightly around the filling, folding in sides to prevent leakage. Seal the edge using water or beaten egg to secure the roll.
- Cook the Eggrolls: For frying, heat oil in a deep skillet or fryer to medium-high heat (~350°F). Fry eggrolls seam-side down for 2-3 minutes per side until golden and crisp. For baking, brush the eggrolls with melted butter or oil and bake at 400°F (200°C) for 15-20 minutes, flipping halfway until crisp and golden.
- Cool and Serve: Drain fried eggrolls on paper towels to remove excess oil. Let cool slightly to allow filling to firm up. Serve warm with optional garnishes such as powdered sugar, fresh strawberry slices, or whipped cream.
Notes
- Use room temperature cream cheese for smooth mixing without lumps.
- Do not overfill the wrappers to prevent bursting during cooking.
- Seal edges properly with water or egg wash to keep eggrolls closed.
- Maintain oil temperature around 350°F to ensure crispness without excess oil absorption.
- Drain eggrolls well on paper towels to keep them crisp and less greasy.
