The Juiciest Beef Potstickers Recipe

The Juiciest Beef Potstickers are a perfect blend of rich, savory ground beef seasoned with aromatics and wrapped in thin dumpling skins. Crispy on the bottom and tender on top, these potstickers offer a mouthwatering combination of juicy filling and a delightful texture contrast, ideal for snacks, appetizers, or main dishes.

Ingredients

Scale

Filling

  • 1 lb ground beef (80% lean recommended)
  • 3 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup cabbage or Napa cabbage, finely shredded
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • Salt and pepper, to taste

Assembly & Cooking

  • Potsticker wrappers (thin, round dumpling wrappers) – about 40 wrappers
  • 1 tablespoon vegetable oil (for frying)
  • 1/4 cup water (for steaming during cooking)

Instructions

  1. Prepare the Filling: In a mixing bowl, combine ground beef, finely chopped green onions, minced garlic, grated ginger, shredded cabbage, soy sauce, sesame oil, cornstarch, salt, and pepper. Mix gently but thoroughly to evenly distribute all seasonings and bind the filling while keeping it juicy.
  2. Assemble the Potstickers: Place a potsticker wrapper on a clean surface. Spoon about a teaspoon of the beef filling into the center. Moisten the wrapper edges with water, then fold it in half to form a half-moon shape. Pinch tightly to seal the edges, pleating if desired for a classic look. Repeat until all filling is used.
  3. Pan-Fry and Steam: Heat vegetable oil over medium heat in a non-stick skillet. Arrange potstickers in a single layer without touching. Fry for 2-3 minutes until bottoms turn golden and crispy. Carefully add 1/4 cup water to the pan and immediately cover with a tight-fitting lid. Steam for 5-7 minutes until water evaporates and filling is cooked through.
  4. Serve Warm: Remove the lid and let potstickers crisp for an additional minute if needed. Serve immediately with your favorite dipping sauce and garnishes.

Notes

  • Choose quality beef with higher fat content for juicier filling.
  • Do not overfill wrappers to prevent tearing and leaks.
  • Seal edges tightly with water and pinch firmly to keep steam inside.
  • Use a non-stick skillet to avoid sticking and preserve crispy bottoms.
  • Cook on medium heat to prevent burning and ensure filling cooks thoroughly.
  • Let potstickers rest for a minute off heat before serving to redistribute juices.
