  • 4 cups fresh ripe watermelon chunks, seeds removed
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/2 cup fresh lime juice (about 34 limes)
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • Optional: 2 tablespoons white rum

Instructions

  1. Prepare the Watermelon: Cut fresh watermelon into chunks and remove any seeds. Puree the watermelon in a blender until completely smooth to create a silky sorbet base.
  2. Make the Mint Lime Syrup: In a saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar completely dissolves to create a simple syrup. Remove from heat, add sliced mint leaves, and let steep until cooled to infuse the fresh mojito flavor.
  3. Combine and Chill: Strain out the mint leaves from the syrup and mix the syrup with the watermelon puree and freshly squeezed lime juice. Add white rum if using. Chill the mixture in the refrigerator for at least one hour to let flavors meld.
  4. Freeze the Sorbet: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until the sorbet reaches a soft, scoopable texture. If you don’t have an ice cream maker, freeze in a shallow container and stir vigorously every 30 minutes until smooth.
  5. Set and Serve: Transfer the sorbet to an airtight container and freeze for an additional 2-3 hours to firm up. Garnish with fresh mint leaves or lime slices before serving and enjoy your refreshing treat!
